Feb. 22 is National Margarita Day, which in Texas, I call “weekdays.” So, here is a traditional top shelf margarita recipe … and a different kind of tequila drink.

The Green Dragon

2 oz. Casa Dragones Blanco tequila

1/2 oz. agave nectar

3/4 oz. key lime juice

Making it: Combine the ingredients in a shaker over ice. Salt the rim with seasoned salt (salt, cardamon, anise seed, fennel seed and dill seed; soak overnight with key lime zest and dehydrate before using).

Fury Road

2 oz. Pelligroso Silver tequila

3/4 oz. Heering cherry liqueur

1/2 oz. lemon juice

1/2 oz. lime juice

1/2 oz. agave nectar

2 dashed angostura bitters

1 bar spoon harissa chile paste

Muddled grilled pineapple (soaked in mezcal)

Making it: Combine ingredients in a shaker over ice. Garnish with a slice of grilled pineapple and cayenne pepper-salt.
